Traditional Balsamic Vinegar of Modena PDO AFFINATO is an ancient condiment obtained from must cooked over an open fire in an open jar from typical Modenese grapes such as Trebbiano, Lambrusco and Berzemino.
It is the pride of Modena’s centuries-old tradition.
After a very long period of ageing and refinement in fine wood casks, very limited quantities of Traditional Balsamic Vinegar of Modena PDO are obtained.
