Our operative philosophy is based on a fundamental concept:

ACETAIA ESTENSE is located in the heart of the area where the Balsamic Vinegar of Modena PGI typically has its origins. This area was once called the famous “DUCATO ESTENSE” that first proclaimed the exceptional quality of this VINEGAR, which was given as an exclusive gift to European Royals by the DUKE of MODENA.

We are an artisanal vinegar factory rigorously looking for the highest quality of our balsamic vinegars by using only raw materials coming from Italy, but we are also respectful of the safety of our customers; we therefore submit the production cycle of Traditional Balsamic Vinegar of Modena DOP and of the Balsamic vinegar of Modena PGI to the control of certifiers (Kiwa Cernet and CSQA) respectively authorized by the Ministry of Agriculture and Forestry, which guarantee compliance with the regulations.

Concerning our production called “The Family Recipes”, using ancient production processes that have been handed down by family tradition, we guarantee and personally inspect every stage of the products’ preparation and ageing, collaborating, when necessary, with external laboratories in order to carry out more detailed chemical analysis. All this allows us to give our clients maximum security and guarantee in our products.

The renovated premises welcome you among the old walls, barrels of all ages and sizes, modern equipment for bottling and a colorful display of bottles in the retail store open to the public.

    Locanda Gallo d'Oro

    Ha inizio la gestione, da parte della famiglia Manzini, della Locanda Gallo d'Oro dove si trovano ora parte dei locali dell'Acetaia.

    La cessione della Locanda

    La famiglia Manzini termina l'attività della rinomata Locanda Gallo d'Oro e, a seguito della cessione, l'Aceto Balsamico rimane ad uso esclusivo della famiglia per omaggiarlo a parenti ed amici.

    Nasce l'idea di ristrutturare gli storici locali per trasferirvi le botticelle storiche ed iniziare un'attività di ampliamento della produzione e per la commercializzazione dell'Aceto Balsamico

    Inaugurazione dei locali storici ristrutturati per continuare ad ampliare la produzione e commercializzazione del prodotto. Negli anni successivi è stato aperto anche un punto vendita al pubblico.

The history of our Balsamic vinegar has distant roots and origins.

Acetaia Estense is located in the centre of Montale Rangone – which has always been a popular destination for an “outdoor” picnic in Modena – in the building where the old “Golden Rooster” inn was located. This inn already existed in 1908 and was run by the Manzini Family, who skillfully produced a very special vinegar in its quiet attic; a fragrant and dense Balsamic Vinegar, for the use of the family and the delight of the Golden Rooster’s customers, flavoring the dishes (served at the table) with this precious product.

Today that “balsamic” still survives in a series of small barrels kept in a secret and hidden corner of our Acetaia Estense, authentic testimonial of a family tradition that has evolved productively and commercially over the years. It is a company which does not look at the turnover numbers, but is always searching the precise and mutual quality of the two production lines: the balsamic vinegar of Modena PGI and the traditional balsamic vinegar of Modena PDO.

In its work, Acetaia Estense has pursued the policy, or more precisely the aim, of obtaining in both production lines a correct qualitative compensation (truly “balsamic”) that offers a precise and delicate palate, well-balanced between sweet and sour. This balance is a real tasting heritage, in all authentic balsamic vinegars in Modena, pleasant in all its nuances, essential to give every tasting and each dish its full vocation to combine with the most varied ingredients of a wise and careful cooking.
